Birria bombs

Bought the Birria Balls on Amazon to try out having sense seen them in a local grocery store. These were Duck Birria Tacos. I whole-plucked and split a couple of ducks last year in half. I put about 4 halves, some chopped onion, birria bomb, and water in the crockpot and left half the day. Had to strain most of the meat and bones out of the liquid when done. Kept it simple with chopped onion, cilantro, and Oaxaca (Quesillo) cheese. Had to skim a lot of duck fat off the stock for dipping. They were a hit. Need to double the recipe next time, as there were no leftovers. For ease of making i highly recommend.

My son Clay won a wild game cookoff with Snow Goose Birria tacos. First round of tasting half the people at the event avoided snow goose. I tried the snow goose for the first time to support my son. It was very good. After he won, everybody stopped by and he was out of food quickly. All thumbs up.
