Baked beans.

I’ve made all 3 of these a bit and they’re all great.

First 2 are “Irish Baked Beans”

-1st one is quick and easy using canned beans.

-2nd is a little more in depth using dried beans.

-And 3rd is more American bbq style. I’ve only added the bacon and not the extra meat when making this one.
 
1. brown a generous amount of chunks or big pieces of bacon or left over brisket
2. add medium onion before bacon is completely cooked
3. add chopped up jalapeno
4.add canned Butter Beans
5. add V8 or tomato juice
6.add spice with cumin, smoked paprika, garlic powder, chili powder, mustard powder
7. add brown sugar. Can also add a bit of molasses can also add a bit of vinegar
simmer
 
About the time you go to take your first mouth full of beans, my wife always says "don't forget your Beano."
I have no idea why she says that.

Years ago my brother and I backpacked in an onion and a small bottle of ketchup in anticipation of a successful elk hunt.
We got an elk and washed it down with a wineskin full of blackberry brandy that we found on the trail in that had fallen off a horse. At least I think that is what it was.

That was the freshest and best liver I have had. I have never had beans with liver though.

My preferred method is to slice fairly thin, toss onto a screaming hot grill, splash a little Worcestershire on it (you want the grill so hot the W-sauce sizzles when it hits), grill for about 2 minutes on each side. As @mtmuley correctly states, you want medium rare tops.
 
Definitely going to try one or two of these. Not sure I’m brave enough to serve this with people sharing the same tent though. I once ate a family size can of baked beans in one sitting at elk camp with a friend on our first hunting trip together. I can’t believe I’m still his friend after what I did the next 3-4 days. 😳😂

Yeah. Now I have to sift through and find the recipe that appeals to me. I've hunted with both guys a long time. Hey, it's elk camp. mtmuley
