Dredge in milk and flour. Salt, pepper and onions fried with it. Don't over cook. Fresh is best. I've frozen it and it's ok. mtmuleyWhat’s the secret method? Other than bury it?

If it is over cooked it tastes like a shoe. Years ago in the Breaks my buddy and I introduced some boys from Pennsylvania to fresh elk liver. They, and one of their Father's had the only NR bull tags where we were at. All three killed bulls. I bet they will never forget the hunts or the dinner we had. One of them used to lurk here.
