It’s been a long night. Did 4 hinds and a front last night and another hind this am. One hind to go.

How long was that aged? Are you concerned with mold contamination to the fresh meat after trimming the mold off and flipping the quarter?

3 weeks. Need to get a dehydrator or leave the door cracked a bit more.

I’m pretty ocd when it comes to trimming. Trim one side clean and then lay clean side down on the other cutting board while I clean the table and cutting board where the moldy side was laying and then set it back in place before I start cutting the second side.

Sub ground floor basement footings….deeper than the pic shows. Some well placed lighting. Not unusual to encounter a group of women taking pictures.
