How long was that aged? Are you concerned with mold contamination to the fresh meat after trimming the mold off and flipping the quarter?
3 weeks. Need to get a dehydrator or leave the door cracked a bit more.

I’m pretty ocd when it comes to trimming. Trim one side clean and then lay clean side down on the other cutting board while I clean the table and cutting board where the moldy side was laying and then set it back in place before I start cutting the second side.
