If you spatchcock the bird before grilling/smoking it, It will cook more evenly and the dark meat will cook quicker so the breast doesn't dry out.
Yep this. Took me awhile, but I won't cook a chicken any other way from now on. mtmuley
 
Hank Shaw posted a recipe last week with a whole pig's head rubbed in achiote paste and sevilla oranges. The timing was perfect with a hunt this past Monday, lastnight I got to eat it and it was effing delicious. I have four front shoulders I can experiment with now for this recipe. Certainly they won't have the je ne sais quoi of the head, but a lot more meat
