Of all the pics, thin sliced & lightly floured w/ salt & generous black pepper'd heart, pan fried in bacon grease...watch out aorta, here it comes.
 
I'll be right over! I'll take some fresh morels dusted in flour and fried in butter for starters, followed by the sardine salad and a boar chop. A little brisket and smoked turkey on the side would be good. Can I bring some steamed green beans sauted in fresh pressed garlic butter as a side dish?
 
Good looking morels. One of my favorite things to do in the spring is to be out looking for them.
 
I have never had heart, one of the few things. Is it best to cook well done or a real rare. I like most of my game meat cooked pretty rare, warm inside is good enough! I might have to try it on the next animal.

I like to slice it, then pound it somehow and season with taco seasoning. Grill the flat strips effectively to MW/W (since they're thin), place them on a cutting board, add a squeeze of lime then chop and toss in your favorite tortilla with favorite taco fixins.
