Sliced elk meat, High country hickory flavored jerky seasoning and my dehydrator.

Cured in the chiller overnight and then 12 hours in the dehydrator. In time to bag and gift for Christmas.

And I made great progress on a knife sheath.

That jerky looks awesome though, turned out very well!
 
What am I missing here ? I dont get it .

Me either. Oh well, its not important.

I let the first 30 pounds stabilize overnight. Then I cut the big panels of jerky into smaller, roughly 1 inch by 2 inch pieces and vacuum sealed it.

Much of this will go to customers and clients and suppliers and friends and family. I love turning bow kills into to tasty treats.
