What's with the glass jars in the fridge, just storing? BTW, did you ever tell us how the aging experiment you did a couple years ago panned out?
We are a raw milk drop location. The milk gets dropped at our house and then a bunch of people come pick up their milk and drop off their empties.

Raw milk dealer if you will.

The dry age went great. We ended up doing 60 days. I’m actually in the process of trying to buy the dry ager lol. Flavor was really good and the after taste was unique. Would definitely do it again. I can’t remember total weight loss off the top of my head but it wasn’t horrible.

Definitely have to start with a big piece, looks like 3/8-1/2" trimmed off. Just about used up your Victorinox knife haven't you.

Some of the pics are deceiving. Less than a 1/4”. Honestly the thickness isn’t much thicker than a normal rind but way harder and the overall size of the chunk shrinks a bit.

And a buddy used to own a wild game processor and that was one of his knives. Mine still have some life left on them.
