How good are mountain lions to eat? I've seen that question asked a lot. I've figured out my answer to that a couple years ago the first time I ate mountain lion.

Some pics from my lion hunt last year and from cooking up a pot of white lion chili tonight.

Great Northen beans have been simmering a while.....
Time to cut up the onions, garlic and jalepeno peppers.

Saute the meat, saute the onions and peppers. Add pressed garlic last, don't want to scorch the garlic. Combine everything and all the pan juices in a large stock pot.

Add some beef broth, chicken boullion, whatever's handy, some more water. I had some sweet corn handy, added a bit of a sweet taste to it. Chunked up one of the tomatos that was ripening on the window sill, that added a bit of color. I like lots of cumin in white chili, some people don't like as much a I do, it has a distinctive flavor. My wife had some fresh cilantro in the fridge, a couple sprigs of that, don't overdo the cilantro.

Let it simmer an hour or more. Last step is to add some heavy whipping cream. I got a bit carried away. It made my chili pretty rich. The white cat chili definitely is smooth.

It should end up looking something like this.

Good pics there OAK .:D I mean Gerald. That chili does look good. I may be wrong but isn't that dog supposed to be the color of the one in the picture below. :D A kidding aside that is a could looking English hound.

It doesn't matter what color the dog is, just which direction their nose is pointing. :)
