For supper last night I pulled an old family favorite out of the recipe book and made venison schnitzel cake. We used to eat it with beef schnitzel, but with a pile of venison chunks in the fridge waiting for the canner I cut my own and I think the flavor is even better. It was such a hit with the family that we had it again for lunch today :)

Method: bread and fry very thinly sliced schnitzel cuts in hot oil. The first dipping is in white flour, then beaten egg heavily seasoned with salt, pepper and garlic powder, then in (fresh, home ground) whole wheat flour. Layer in a glass baking dish with finely chopped onion and grated cheese between each layer. Top with diced tomatoes and more cheese and onion. Bake at 400F for 30 minutes or until the cheese is golden on top. Cut into slices to serve with fried potatoes and green beans.
