Pronghorn Liver

I know a lot of folks don’t like eating liver. For those that do, have you ever tried pronghorn liver? How was it? Thinking of trying this.
 
It's delicious, just like whitetail if not milder. Just don't overcook it; that's why most people don't like it.
 
This is may be able to get on board with
Roughly follow Hank’s boudin recipe (https://honest-food.net/cajun-boudin-sausage-recipe/), then mix in a pound or two of shredded habanero cheddar. Make balls using a small ice cream scoop, chill them on a wire rack over a tray in the fridge for an hour or two, then flour, egg-dip and bread with panko. Fry four or five at a time in peanut oil until golden and serve with homemade remoulade and the col’beer of your choice.
 
I'll eat liver just to be polite if someone cooks it but I don't save them at all.
We've tried rabbit livers, elk livers and antelope livers and they all taste the same. Just not my thing.
We do enjoy the heart though. (y)
