Plate ‘em up

After working in the yard all day I came inside and remembered I had thawed a package of elk linguica yesterday. Decided to butterfly them and cooked them in a pan along with some diced onions. Threw one on some toasted bread with sriracha Mayo, mustard, pepper jack cheese and avacado. It didn’t disappoint!

Did a bunch of street tacos couple days ago. Besides the regular strip steak fajita meat I also did deer hearts and shanks. Cubed the heart and diced peppers and onions then marinated in claude's fajita marinade and cooked in cast iron skillet. Smoked the shanks for a couple hours then simmered in a pot of half enchilada sauce and half beef broth for 4 hours.20220321_180840.jpg20220321_181742.jpg
