Plate ‘em up

My wife and son are at the rodeo today, my daughter had her first softball game of the year today so I was on duty for that. Asked her what she wanted for dinner, she wanted backstrap off one of her deer from this year. So I seared one on the Infared, side of green beans and some sautéed spinach, some seared jalapeños too and a little garlic butter dipping sauce. out of sight!

Saturday I decided to do a little bbqing since it’s was 74 outside.
Smoked chicken thighs on the Traeger. On the oak pit baby back ribs, tritip, pork belly, elk Swiss sausage, mushrooms, green onions and garlic bread. Beans on the stove top.

Antelope top round Rouladen, stuffed/rolled with stone ground mustard, bacon, scallions and spicy pickles. Seared then slow cooked for 6 hours with veggies and a chicken stock from one of our backyard birds. Topped with a gorgonzola cream sauce.
