Any leek diggers and leek dip makers on the forum? One of the things I miss most back east is digging leeks with my dad, cooking up sweet dinners, and canning them.
Anybody got some good recipes?
 
Getting ready for ramp season! These ones are volunteers that grew from where I have thrown ramp cleaning waste in the past. I still have some frozen ones in the freezer from last year.

I really like a simple leek soup...leeks sautéed in a ton of butter, add chicken stock, salt/pepper, simmer diced red potatoes till tender, eat. It’s about the only meatless soup that I consider a meal, ha.
 
Clearly I’m a sheltered westerner because I didn’t even realize wild leeks were a thing. I assume they are vastly different from the store bought variety?
I’m with you, never knew. But I’m intrigued, I like hunting for just about anything. I wonder if they’re in Montana?
 
Dug a good bit yesterday. Potato soup with them is my favorite. Good sauteed with scrambled eggs. Made a nice quiche with them once. The greens cook down very similar to spinach, but with a nice bite. The bulbs I substitute basically anything you would use onion and garlic for.
 
This is my adaptation of a simple clam sauce recipe my sister gave me. As MJE2083 suggested, I just substituted ramp bulbs for garlic, and I used ramp greens instead of fresh parsley.

The wife makes a dish with noodles, Leek, fried hamburger with a little bullion added to the meat (flavor enhancer) and Cheese sauce. The Cheese sauce is a little milk, some grated Cheddar and some Cream Cheese with herbs. Kind of a cholesterol bomb but really tasty. :)
 
I always find a decent amount of leeks while mushroom hunting which makes it nice that way I don’t come home empty handed. Living back east This time of year is actually pretty fun. Between fishing season, mushrooms, leeks, and spring turkey there is always something to do outside.
