Iguana (Chicken of the trees) - Anyone ever try this?

Not sure, but I’m thinking carnitas for the legs and smaller tail bases and sear and bake the large tail bases.

I shot 2 giants that I didn’t recover, the rusty brown and orange color - one ran down the burrow and the other swam down to the bottom of the canal. It’s about a nickel-sized target for an instant kill, and if you’re off on the biggest ones it is not forgiving.
 
I’d probably try a Caribbean iguana stew, or braise it to pull the meat for tacos or tamales. If it’s anything like turtle, it needs to be braised to get tender.
 
We saw probably 75. The south FL guide runs the routes a lot so the lizards don’t hold still very long! I’ll PM guide info for anyone who’s interested.

Also, if you have 2-3 days to figure it out, iguana is a very doable DIY hunt with a canoe, kayak, bike, e-bike, on foot, or even road hunting. I can help work you through the basics if it’s something you want to try.

Are Pythons still on the kill with prejudice list? Did you see any?
