I've been coveting some grill designs and the Argentinian Style Parrilla is catching my eye. Two aspects that I really like is the V bars for Grill slats, and a Brasero for the burning wood to make coals.

What do you like in a Grill?

Good stuff Rocky...big fan of cowboy coal cooking. Makes me think of dutch oven cobbler this morning.

I like an open pit also using red oak coals. I will be building a new one once the backyard projects are completed. Debating a built in or moveable like I currently use.

Here is what I’d like to build if I go that route or something similar.

If I get to the point where I have more room outside, I'd go for one of those, @2rocky.

I cooked professionally on a large barrel pit for a BBQ vendor (texas style) which was a mix of wood for smoke and propane. I love the lazy cooking that comes from natural fuels & charcoal too, but I save those for large gatherings, etc since you get such a long burn out of the coals.

For daily cooking & causual gatherings, I prefer gas. We picked up a Nexgrill 5 burner 5 years ago and have had nothing but success with it. It has a side burner as well.

I like that Parrilla design. The only other thing I'd like to have installed is a drop down coal shield for when the wind kicks up.
