Gotcha, I usually use actual jalapeños in mine. Run em right through the grinder with the meat.
Never thought of running the jalapenos through the grinder with the meat gonna have yo try that.


I use this recipe and after the 2 days in the fermento I add the cheese and finely diced jalapeno and mix again before stuffing. Can't get it to post just Google meateater summer sausage it's the first one that comes up.https://www.themeateater.com/cook/recipes/summer-sausage-recipe

No need to, the mix works well with the dehydrated ones in it. There is plenty of moisture to rehydrate them and everything binds well.

I really like it juice and all goes right in and gets mixed with the meat saves a ton of time dicing as well.
 
Curly sausage kitchen is a good place to buy seasonings. I really like their bacon kit that you use on ground game. I form it in a 9x13 pan and smoke on the traeger.
 
So I have been stuffing burger straight from the grinder.
Does the sausage stuffer work more efficiently for stuffing burger in to the 1 lb plastic sacks?

The stuffers work waaaaay better than the grinder, I got lazy the other night and didn't get the stuffer out while making a small batch of breakfast sausage, doing it with the grinder was such a PIA...
