I was lazy. I used leftover chicken flavor box stuffing. I have some cornbread stuffing that works good for this.

First I pounded out a piece of backstrap with a meat mallet then cut into around 1in strips. After that Flour, egg wash, seasoned flour then into the grease at 350 till they start to float.

Similar process. I think I just get the oil to hot.
