I don't have a recipe. I am looking for one.

Does anyone have a particularly good recipe for pheasant (or turkey/quail/grouse/etc.) that would help me use up this last half-bottle of white wine I have laying around? Anything with a good herb or spice flavor would be great. I've got plenty of birds in the freezer, some wild rice, and this opened bottle of wine that needs to be used. Just looking for suggestions.

I would brown them, then put them in a Dutch oven and braise them with the wine, some pears and some mushrooms. Reduce the sauce, serve with the wild rice.
