Dude so real. I think the tri tip recipe smoking to 130 and then reverse seared for a year or two- and then do the elk or deer backstrap same way, brought familiarity and helped a ton

When we first met I cooked up antelope backstrap she ate the whole thing. On the last bite I told her what it was she spit it out and was mortified. I give up. She also thinks well water is not as good as bottled water. Like some holy man is blessing this shit at a waterfall in Indonesia before he puts it on the ice mountain truck.

$8.88/lb prime rib for Christmas and now $7 lobster tails for NYE. I feel like a king.

And people keep complaining about inflation. Lobster tails were $5 at Aldi 15 years ago so that seems pretty solid buy at the local store for rural Townsend Montana.

First year in a while we didn’t do a Wellington. Love those damn things!

We made some “death bed tacos” again with some moose along with a few cocktails. Those are like crack if you haven’t tried the recipe from Hanks new book. So simple but so good.

Tonight is a monumental night. My wife hated eating ANY game meat and overall refused to enjoy it—Until Xmas weekend.
Aside from the typical main courses, I smoked a hunk of elk backstrap and then reverse seared like many nights before…
She ate a bite and said she could eat the whole damned thing! I couldn’t believe it! We’ve been together 13 years?! So tonight, for the very first time, elk is the main course!! Going for reverse sear soon! View attachment 397635

Not NYE specifically but the NYD tradition among many Southerners is collard greens and black-eyed peas. Legend is they represent fortune and good luck in the coming year. Did a batch of collards/turnip greens with a smoked turkey leg, black-eyed peas cooked with smoked duck wings and topped with Comeaux’s Andouille from St. Martin Parish, Louisiana.
