My chiller fridge setup

Hi All,
OK, you can't get an Elk (not that we have any in the UK) or a red deer stag, but i just managed to get this Fallow Buck (button antlers) into my chiller a few days ago.
Its an old beer fridge that i built a shed around.
Going to butcher it today and sell the venison tomorrow at a farmers market.

A friend built something similar with a standard refrigerator for early season kills. It crapped out one day when it was full and 100 degrees...let's just say antelope has never smelled worse!

What are the meat preparation and health sanitation requirements for selling wild game meat at a farmer's market there?

My house gets inspected once a year by the local council officer, as long as i separate the skinning area from the meat preparation area it isnt a problem.
But the traceability and weights and measures are a bit more hard work, after all i cant sell horse and tell them its venison:eek:
