Going off the jerky thread, those of you who eat biltong, what's your fancy? I definitely like it more dried out than not.
 
I made it for the first time last fall. Some pieces were more dry than others, but my favorite had a good firm dry exterior and a bit softer interior.
 
Haven’t tried it yet. Will make it when I have enough meat to justify hanging some backstrap strips. Looks really good though
 
1st attempt. This was in May of 2024. Marinated beef for 24 hours and air-cured it in my garage with a netting enclosure.
