Food Debate: Biltong Dryness Edition

Going off the jerky thread, those of you who eat biltong, what's your fancy? I definitely like it more dried out than not.

I haven't tried enough of it to have a preference. But I haven't had any of it that I didnt like.

I made it for the first time last fall. Some pieces were more dry than others, but my favorite had a good firm dry exterior and a bit softer interior.

Haven’t tried it yet. Will make it when I have enough meat to justify hanging some backstrap strips. Looks really good though
