I don't know why some people turn up their noses at antelope meat. I strongly suspect it has more to do with the way most people take care of their goats than it does with them being inherently bad tasting. These antelope were more tender and tasted milder than almost any deer or elk I've eaten. They tasted great.


Gerald....you are exactly right. I see people drive them around in hot dusty trucks all day long, don't clean them, don't cool them, don't hang them. My family and even some neighbors who aren't hunters but have eaten game meat with us prefer antelope backstrap to any other cut of meat from an elk or a deer, which are both good if also taken care of. Glad to hear someone else does more than make jerky from them.
