Elk ribs on a pellet grill?

I would decrease the raw smoking time and increase the wrapped time. Adding a healthy dosage of lard or butter to the wrap when I do

Agreed. Probably an hour to hour and a half of smoke and then wrap with a bit of apple juice and butter. Half hour with sauce.
 
You mean you can't throw some ribs in the crockpot with some barbecue sauce ?
...and have something pretty dang good?
Maybe to lean.
 
I’ve done moose ribs. Smoked for an hour at 225, wrapped in foil with a can of sprite in it for another 2-3 hours. Opened the foil and slathered with sauce. Back in the smoker to make a crust with the bbq sauce.

edit: sorry, I don’t have a pellet grill. This was just a regular old smoker.
