thi works great with any variety of big game steaks(or beef). i used "elk" to lure in the elk-boys!
elk pepper steak
4# elk steaks
butter
bacon grease
flour
lg. onion
3 big bell peppers
(use a red, yellow & green for
color or whatever is handy)
3-4 cloves garlic
1# mushrooms
salt, black and cayenne pepper
in a skillet heat a couple TBS bacon grease
dredge steaks in flour, salt, black and cayenne pepper. shake to remove excess flour. fry to your tastes(medium rare for me). place on paper towels or brown paper sacks to drain.
in another skillet saute sliced onions and bell peppers in butter and bacon grease add garlic and mushrooms during the last 2 minutes or so.
serve steaks heaped with veggie mix on top. maybe on a bed of rice. enjoy with a good red wine like a Shiraz.
