I'm having a good time bird hunting this Fall. We had a pretty good late hatch. Lots of young chukar and bigger than normal coveys of huns. I'm using a 3 yr old Brittany, third one from the same bloodline going back to '83. He's a handfull and my legs aren't what they used to be but it's still fun.

We do it different ways but always use the whole bird. I usually skin them but if I have some I think aren't shot up to bad I'll pick the feathers and leave the skin on. Those we stuff with apple and grill slow. The skinned birds I cut into pieces. Sometimes I take the breasts and cut slits on each side of the keel and hollow out a little pocket.Stuff the slits with roasted peppers and cheese. Rub some olive oil on the breast and put a good rub on it then a slice of bacon over the top. Grill it slow until the bacon looks cooked. The wife takes the ones that have been in the freezer longest and makes pot pies. But the way I like them best is cut up and fried like chicken then make gravy out of the drippins. Old school.
 
Looks like you had a great day, thanks for sharing the pictures. I really like that first one with the sun in the foreground and the low clouds splitting the ridges in the back round.
