Cooler size

As long as you don't mind the lag sticking out the other side of the wall? 2x4 is about 3.5 inches along with drywall on both sides would be about 4.5 inches total for the wall thickness. 6" might be a bit long for that application.

That's what I call dual-purpose right there....I swear it is!!! Hang a a jackalope on the outside!!
 
In 2011, I went on a moose hunt in Newfoundland. I could get no information on how much cooler space that I needed to bring back all the meat. My wife was working customer service at Cabela's at the time, so since I had the discount, I bought two 200-quart Coleman coolers. They were perfect for the trip. I brought back 300 pounds of processed, packaged moose meat and had plenty of room for ice. One, 200-quart cooler should do you for an elk. If you bone out the meat, you are probably looking at 150-200 pounds of meat unless you kill a monster and then it could be a bit more.

I would have at least 200 quarts total, whether with one cooler or two.
