Sorry, I never had time to slice and fry this morning. Had a sick kid and another who didn't want to wake up and we almost missed the bus as it was.

For our sake, he should have missed the bus and you could have driven him to school. We all are dying to know how this turns out!
Flip... Priorities! Stick the kid in front of the computer, call it home school, and get to the bacon!

Slicing. I’ve read a few recipes and they were all similar but every one of them said to slice thin. Kind of hard to do without a meat slicer, but I’m trying my best.

The beef bacon Fried up very similar to pork bacon. I tried a small piece before I fried it and thought it would be to salty. After frying the bacon it is very rich, not salty. I added maple sugar to the rub and can taste notes of it in the meat. It is a very pleasant taste. It’s chewier than pork bacon, but in a good way. I would say if you ever find yourself with a beef navel make some beef bacon with it.

For the final test, my 7 year old daughter who can eat a pound of bacon herself tried a piece and gave it a resounding 
thumbs up!

I don’t think so. I’ve only made venison pastrami. The pastrami was very lean, but it’s amazing if you want to try to make pastrami.
