ring bologna question

I was going to make up some ring bologna this saturday. I haven't made it in years but have a couple kits to use up. My question is could I make it friday night and stuff everything put it in the fridge then smoke it saturday? Would that be ok? Or does it need to go straight to the smoker after stuffing? I was just trying to make it a little easier that way we could smoke it after we run traps saturday morning.
 
You'll be fine. You could even take it out of the fridge in the morning while you run traps to let it warm up some. It will start out at a higher temp and let you finish it a bit quicker that way.
 
Thank you guys. It has been 10 years or more since I made any. Hoping the pellet grill/smoker sill work for smoking it
 
You'll be fine. Fridge will control any bacteria growth to a reasonable level before smoking. Could be a couple days without issue if you keep the meat cool the entire time, not that it's recommended but sometimes life happens and your can't get to it right away
