Baked beans.

If it is over cooked it tastes like a shoe. Years ago in the Breaks my buddy and I introduced some boys from Pennsylvania to fresh elk liver. They, and one of their Father's had the only NR bull tags where we were at. All three killed bulls. I bet they will never forget the hunts or the dinner we had. One of them used to lurk here. Awesome evening. mtmuley

1lb bacon browned
1 lb ground beast browned
Drain the grease
Add
1 large sweet onion
1 green bell pepper
1 red bell pepper
1 jalapeno
Saute for a few minutes with bacon and hamburger.
Add two large cans of Bushes baked beans.
When warmed up good add a cup of sweet baby ray bbq sauce and a half cup of mustard. More or less to your taste.
I like a little more mustard.
Heat it through and eat.

This is always a hit anytime I make it. I usually use a Dutch oven, but a large pan will work.
 
No recipe I usually just wing it. Best done when I'm smoking a pork butt. Let the pork butt drip into the beans and then chop up a little jalapeno and throw some of the fatty pieces of said pork butt in, dash of BBQ sauce and worcestershire (sp?) To taste. Edit to add a little brown sugar if you feel like it.
 
You can make them fancier but this is a good base, definitely doesn’t require all the syrup and a spicy bbq sauce takes it up a notch. We prefer show boat beans to van camp

I have that cook book as well. The sweet potato pie and corn caserole recipes are excellent.
 
Cowboy Kent for the win!
My son got pretty big into Cowboy Kent for a while. We made a trip to Colorado to scout for a moose hunt, and he wanted to stop by his cafe on the way up. We made sure to hit Childress, TX and stop for the first night. The next morning we drove over to Wellington and had breakfast there. He wasn't there, but his wife was. We had some good breakfast burritos and coffee, and grabbed a few things for breakfast for the next few days. The set where he filmed some of his shows was out back of the cafe, and we got to check it out too.
 
I’ve tried fresh elk/deer liver several times over the years. I, and the family, spit out the first mouthful every time.
 
Bush’s, Hormel bacon bits, chopped green scallions, mustard, & sweet baby Rays & a dash of apple cider vinegar...

Big thumbs up on thin sliced elk liver/heart lightly floured/seasoned & seared.
