Awesome Javelina

I’ve been trying to find a way to make Javelina taste good, not just merely edible. Not gonna lie, I’ve cooked a few that tasted like a combo of feet and skunk juice. We have an abundance of the stinky little buggers and I have cooked them many many times - usually “edible” is about as good as they get.

Anyways, I saw Randy’s video with Hank Shaw making Pazole Verde with a Javie, so I gave it whirl. Unbelievably good, I had some as soup then I cooked it down a little more and used it for Nachos at a get together on Saturday evening. It was a big hit!
