What's on the smoker today?

Looking good! You use a mop or spray?
Nothing yet and usually don't. 225 on the Recteq all night with 100% cherry pellets. I tripped the fat cap a bit but not too much and smoke it fat side down which I've found helps keep the flat from drying out too much from the heat on the bottom.

I'm sitting at about 190 right now in both point and flat and will start probing around 195.

I'm also trying the Kinder brisket rub for the first time. I've liked most of their stuff I've tried so far.
 
Tried something new today…saw Tri-tip at the grocery store yesterday….never see that around these parts much.. so figured I would give her a go

Pickled up some peppers, onions, carrots, garlic, n cauliflower….chopped it up for a topping..along with guacamole.
Never had tri-tip before…damn tasty!!
