What he said. I already submitted the application for being a nephew. Comes with a niece package. Best part is you inherit a hunting partner.

Wife tossed me a frozen pork butt, 5 lbs, at 10am. Just informed, I'm cooking dinner. Thawing in warm water. At noon 30 degree in center. Rubbed with mustard. Salt, pepper, 1&1. Some paprika onion powder. Let set another 1/2 hour temp came to 32f.Smoke with apple chips @ 275 to 165. Then wrap tight in foil

In the foil wrap, I added a bit of water & cider vinegar.
Cooked until temp hit 200. Mine ran up a bit more.
Let it rest, over an hour.
A 5 hour smoke!

I just pulled mine and wrapped them to finish in the oven. Love these ribs.

I did some chicken legs today. I used apricot wood and they turned out pretty good but I failed by not taking a picture.

I used to pick up almond and apricot wood from a guy we would get olive oil from in the valley.
