Wapiti Rocky Mountain Oysters

Another cut that seems to gross people out is the oysters from big game. On elk, especially they are really good. I also cut them off antelope and venison and people who hunted with me once they tasted them started eating them everytime they went with me.

My favorite is pork. I prefer the ones off the yearlings of both myself. However, elk, deer, antelope are still good. Just not as tender as them you get from youngsters are.

if I was a game warden I'd probably have fun with hunters making sure they recovered the "edible meat portions" between the legs, and the heart and the liver and tongue...

I is not fond of beer battered. Just me LOL. I like to use a flour and egg bath followed by some bread crumbs and spices.
