I use this one for venison round steaks and other less tender cuts:

2 lbs venison steak cut into 2''x 2'' pieces.
1 medium onion
1 cup flour
1 tsp salt
fresh groung black pepper
1 tsp onion powder
1 tsp garlic powder
2 slices bacon, chopped
1 can cream of mushroom soup
1/2 cup beef broth or bullion

In a skillet, render bacon until brown. Add onion, either diced or sliced, and sautee until clear. Mix flour, salt, pepper, onion powder, and garlic powder. Dredge steak pieces in flour to coat and add to skillet. Brown venison on both sides. Remove steak and layer in casserole or crock pot. Add soup over the top. Deglaze skillet with beef broth and mix well. Pour skillet mixture over the steak and soup. Cook, covered, for 1-1/2-2 hours at 325 degrees or on high in crockpot. Serve with garlic mashed potatos.
