I was just looking at my cast iron the other day and thinking that it’s in the top three of essential items in the kitchen. I love that thing like one of my kids!

It sure is. Frying, sautéing, searing ,roasting and slow cooking on about every kind of heat source you might need it to work on. I both have uncoated and enamel coated cast iron. I use them all but I use my lodge covered 12 inch deep skillet most of all my iron. I bought it 20 years ago at a Winn Dixie in the Florida Keys on sale for $12.
We were fishing down there. We never used it there. For a long time I only used it for frying fish. I think thats how it got seasoned so well.
