Just finished a batch of speed goat jerky and elk snack sticks. Used my new Christmas gift, a jerky gun; it worked great! I cooked the elk sticks in an oven until they were 165 degrees and they turned out fine, wasn’t dried out. The jerky was made from ground antelope meat and put in a dehydrator for 9 hrs. It was tuff but didn’t break when bent. I’ve made deer jerky from cutting a roast and an oven and I liked it better, but the ground meat in a dehydrator with a jerky gun was simple. Just make sure not to add fat when you grind your jerky ground meat. I just love it when my family enjoys the meat hunting brings home!
