I like a little bit of nose up, gives them a rightful "I'm all that" look and also gives a better view of the horns. Biggest thing I'd add is to make sure the mouth is not closed, un natural looking IMHO. Like in the wild, a bit of teeth showing really makes them look natural.

Oak's Dall really catches my eye, for the reasons Idaho Rob posted and the stark whiteness of the hair really makes it stand out.

The side view of his Roman nose lets you know he was a battler too...
