SE Idaho - NE Utah pit stop recommendations

Hoping to get a little advice from some fellow HT's, my brother in law and I will be on a road trip at the end of January and looking for a good pit stop idea. He and his family are moving back home to Cheyenne and I'll be helping, he and I are driving while the little one and momma are flying. We're looking to stop anywhere between Boise to Pocatello to Ogden. Looking to get some fishing/hunting/shed hunting/trap shooting or some other activity to break up the drive for a half day or so. Also if you have any good eats in that region, the info would be appreciated. Just pitching the idea as we know it's a tough time of the year to be getting any outdoor rec in, we might just be hitting a local brewery for dinner and hitting the road the next morning.
 
Antelope Island is a must-do if you like seeing critters. My brother and I are heading there tomorrow to see the deer. It's not uncommon to see fifteen 180+ deer in an hour or two, plus it's a paved road and only a few minutes off I-15.

If you like Chinese food, the Mandarin in Bountiful, UT is the best there is (they literally have a USA Today article on the wall that lists them as some of the top Chinese food nationally).

If you come through Logan, you could see the elk and do some fishing at Hardware Ranch, but it's not as neat as AI.
 
Maddox restaurant outside of Brigham City has some good food. Might cause a food coma, but it is pretty good stuff.

+1 for Antelope Island if you want to see some big deer and some buffalo. Interesting place.
