Quick Afternoon

  • cup all-purpose flour
  • garlic powder
  • onion powder
  • 2 teaspoons seasoned salt
  • 2 eggs
  • 1/2cup dark beer or water
  • 1 1/2cup panko bread crumbs.
  • Peanut oil or corn oil.. try to stay away from vegetable oil.
  • whatever fish you decide to use.
this is a decently simple coating.. taste pretty good on about all fish if your going to fry them up anyway.. you can add or adjust to your tastes.. remember though that the closer to the actual meat you put your bold flavors the better that flavor will show up in the end dish.

Mix the seasoning salt and flour together also add some garlic powder and onion powder if you want and some pepper in a bowl big enough to drag the filets through.
Whisk the eggs and beer together into a separate bowl.
put the bread crumbs in a bag or in a bowl big enough to dredge the fish through
Drag the fish through the flower mix. Once you have them all coated with flour submerge them in the egg beer mixture.. then dredge in the panko crumbs.
toss in a hot skillet with a couple of inches of peanut oil and fry them up till they start to float decently. Usually around 4 to five minutes at most turning once carefully.
drain it on a upside down cookie rack that has some paper towels under it to absorb a little oil but not touch the filets themselves.
