Plate ‘em up

How did you prepare the octopus? I've been waiting for warmer weather to grill some of mine.

I popped the eyes and mouth out (the rest was already cleaned.
Rinsed it off good in cold water while the pot of water got to a boil.
Add it to the boiling water with an onion cut in half, a big jalapeño cut in half and a small handful of baby carrots.
Turned it to simmer and simmered until the thickest part of the tentacles was fork tender (about 45 minutes for this one)
Removed from the pot and let cool to room temperature. I then took paper towels and wiped off any skin that wanted to come off (it’s a real thin layer)
Then I marinated it in a Mojo sauce for two hours in the fridge
Fired the grill up to 450 and just put it on there a few minutes on each side

First time we tried to do it. It didn’t turn out very good. I don’t think we boiled it long enough. This time it was good eats, tender and tasty

You may have cooked it too long. Calamari gets rubbery if you cook it too long in the fryer. Pisses me off when I get it when me and my son go out to eat and it sucks because they cooked it too long.
