Plate ‘em up

Looks awesome, what is the base recipe? Think I will try that with dried chanterelles, all out of morels, but should be able to stock up in the spring.
I started with this one.

Against my better judgement, I did use the amount of half and half called for (which seemed like a lot more than most other creamy soups I’ve made) and wished I had cut it in half and bumped up the broth. Or just used milk. It was overly thick to me, but still very good.
 
Spent some time with Hank Shaw's Pheasant Quail Cottontail after shooting a hare and several quail.

Made the Chinese orange "chicken" recipe with the quail, and it is a serious throwback two orange chicken at Panda Express..... Brings me back to the summer of '96 when I worked the mall and ate it every week.

Next was the Greek garlic and tomato recipe for the hate. Seriously good recipe, it felt like it was going to be good. Not great all the way through cooking...... Until you add the orange zest at the end, it totally changed everything.

Tried something new tonight and made Adobo quail. Seasoned then seared the quail in the instapot then added water, soy sauce, and adobo seasoning and pressure cooked 10 minutes. Took the liquid out put it in a sauce pan and cooked it down a bit for a thicker sauce and served on top of white rice. I'll be doing it again.20260106_181449.jpg20260106_190700.jpg

No such thing as quail around here for many years. May as well forget about pheasants, too. Bummer.
 
We have a few coveys left here but I'm not much of a bird hunter. My mom has been raising quail and she's got a bit carried away. I've easily cleaned a hundred in the last 5 months and I'm swimming in eggs.View attachment 398204
That would make a difference. They sure are tasty! Never had the eggs but they seem like a pain being so small. Too bad we're so far apart. I have a bunch of fish in the freezer that I would trade for some quail. Better than Cornish hens! I don't even buy them anymore since they got so expensive.
