Im not a big breakfast person. But that looks awesome.View attachment 397913
Huevos rancheros, with a little bit of the extra whitetail chorizo from making sausage yesterday.
Looks awesome, what is the base recipe? Think I will try that with dried chanterelles, all out of morels, but should be able to stock up in the spring.View attachment 397376
Creamy pheasant and wild rice soup, with the last of my dried morels. Perfect warm-up after a negative windchill late season pheasant hunt.
Just as good for dinnerIm not a big breakfast person. But that looks awesome.

Turned out pretty good. I’ll probably go 4:1 vs 3:1 brow sugar to salt next time.Damn, that looks good!

No such thing as quail around here for many years. May as well forget about pheasants, too. Bummer.Tried something new tonight and made Adobo quail. Seasoned then seared the quail in the instapot then added water, soy sauce, and adobo seasoning and pressure cooked 10 minutes. Took the liquid out put it in a sauce pan and cooked it down a bit for a thicker sauce and served on top of white rice. I'll be doing it again.View attachment 398196View attachment 398197
Crazy to think how many pheasants there used to be. Shame. No such thing as quail around here for many years. May as well forget about pheasants, too. Bummer.
We have a few coveys left here but I'm not much of a bird hunter. My mom has been raising quail and she's got a bit carried away. I've easily cleaned a hundred in the last 5 months and I'm swimming in eggs.No such thing as quail around here for many years. May as well forget about pheasants, too. Bummer.

That would make a difference. They sure are tasty! Never had the eggs but they seem like a pain being so small. Too bad we're so far apart. I have a bunch of fish in the freezer that I would trade for some quail. Better than Cornish hens! I don't even buy them anymore since they got so expensive. We have a few coveys left here but I'm not much of a bird hunter. My mom has been raising quail and she's got a bit carried away.
