I can do without all the rice that most sushi is loaded up with. Just give me some good quality ahi tuna or salmon, sliced properly, and a dipping sauce of soy, a little sesame oil and some wasabi, and I’m good to go.

I seldom throw out anything these days. All of my trimming and discards are collected, frozen, and used to either make stocks or tallow that then get used in other dishes.Really good especially considering it's made from what a lot of guys throw away.View attachment 386962View attachment 386963
