Plate ‘em up

I seldom throw out anything these days. All of my trimming and discards are collected, frozen, and used to either make stocks or tallow that then get used in other dishes.
 
Neighbor asked me to smoke a brisket for her to put into some Texas chili she’s making. Said I could keep a couple of pounds of it, so I took a slab from the flat. A bit dry on that end, but still tasted good. Cranked the Kamado up after I took the brisket off and did the potatoes and corn-on-the-cob.

So, how else do you guys like to cook ruffed grouse? I am in need of some more ideas.
I usually just lightly bread and pan fry, but I’ve been thinking about trying braising the next time I have one.

Mom picked up the oldest two and we snuck in a date night on the back porch. Made asparagus, baked potato and a cowboy ribeye I've been dry aging for 21 days. So, how else do you guys like to cook ruffed grouse? I am in need of some more ideas.
Spatchcock rubbed in avocado or coconut oil with spg, or pan seared in butter and continually ladle the butter over it.

I have cooked them piccata style, pan fried with lemon/butter/caper sauce. Excellent.

I have been contemplating a grouse saltimbocca and/or grouse scallopini but haven’t gotten around to it yet. 🤷🏻‍♀️
 
Picked a bunch of chanterelles with my hunting buddy today. What didn't fit into the dryer I sautéed. A bit of butter, fresh garlic, fresh oregano and thyme. Finished with cream and then tossed with a wild rice mix. Went pretty well with grilled chicken and grilled zucchini. Sorry no picture, it all has to be in your mind:)
 
Squash soup. Cooked the squash on pellet grill. Then added with onion, garlic, stock and seasonings. Simmered awhile then puréed. Topped with some venison Andoullie.

I actually liked it. A good way to use some winter squash.
