MT special draw backstraps

My friend killed a special permit bull in the fall and has been generous with the meat. Seared the medallions in butter and then topped with sauteed morels that were picked in the same unit. Baked potato with Montana Madre salsa, pepper jack cheese and sour cream. Spinach with blue cheese and huckleberry vinaigrette.
