That's right up there! I'm a sucker for a nice Swiss. I have several types of cheese (including pepperjack) currently mellowing after I smoked them a few weeks ago.

NM proud, in our Noisy Water Winery here we have Rellano Brothers cheese. They used to do ghost pepper cheese too.
