I'm making some jerky right now. I usually use high country seasoning. I'm wanting to try something different. I have some deer meat to make another batch. Anyone have some awsome recipies they want to share?
 
Pretty much just use the Hi Mountain stuff myself. We like the Cajun flavor and I normally add a bit more spices than the recipe calls for.
 
I have a bag of rib meat I want to try for a change.Stuff I usually make grind out of.
Try out my neighbors new smoker/dryer.
 
Cabelas mixes are the best that I have ever used. The original, peppered and mesquite are all excellent. They have more spice than High Mountain stuff.
 
Try Biltong... look up recipes, theyre pretty simple. Cor7ander, black pepper, a dab of baking soda, brown sugar, garlic, and dip in vinegar. Dry it with a fan, or with low heat. The meat is sliced about 3/4 of an inch or so. I haven't made regular jerkey in years. It take longer to dry it, but you can make 3x as much weight with the same amount of work.
 
Here is what I have been making this year. It's time to do another batch.

1/2 cup coarse sea salt
1/2 cup brown sugar (loose, not packed)
2 Tbsp Morton TenderQuick or other curing salt
2 heaping Tbsp garlic flakes
1/3 cup Worcestershire sauce
5 smoked poblano chiles, chopped (seeds removed)
1/2 cup diced fresh onion
1 heaping Tbsp coarsely crushed black peppercorns
3 quarts water

The above is what I used for 5 pounds of meat.

Soak the meat in the brine for 6-9 hours depending on how strong you want the flavor. Remove from the brine, spread out on racks and let dry in the refrigerator for a couple hours or more.

Sprinkle with black pepper, arrange on skewers or racks, and smoke (I used mesquite wood) at around 120˚ for 4-8 hours depending on how thick you sliced it.

I use "Wildlife Seasonings Jerky Fixins". I used to use my own family recipe, but this just makes it 1) consistently better and 2) cheaper. They sell it at Gander Mountain or you could use Randy's Amazon link above and help a friend out.
