Always heard javalina was not good eating.

Slow cooked hindquarter in Dutch oven for 9 hrs. Seasoned with brown sugar g ar, paprika, garlic powder, a d chili powder. Braised 1 cup apple vinegar, 1 cup apple juice . It was fantastic

I shot a javelina in December, argued with my fellow hunters about whether it was fit to eat, made barbacoa with it when the kids were home over the holidays. Everyone loved it. Let the haters hate; it’s just more javelinas for the rest of us.

Sounds like that is the way to cook javelina. My ex tried cooking it once and it was not good, but then she had trouble boiling water so down the road she went.
